GAPS-friendly Orange Chicken

1 1/2 lbs boneless skinless chicken, cut into chunks
1/3 cup coconut flour
1 tsp vinegar
3 Tb sugar-free ketchup or tomato paste
6 oz frozen orange juice concentrate (no sugar added), thawed
4 Tb honey

ghee for frying

Mix vinegar,  ketchup, orange juice concentrate and honey.  Set aside.
If chicken is moist, roll in coconut flour and shake off excess.  If not moist, coat chicken in one beaten raw egg, drain, and then roll in flour.
Heat ghee in medium pan, and lightly fry coated chicken until about half-cooked.
Place chicken in crock pot and cover with sauce. 
Cover and cook on high for 2-3 hours.
